Chicken Sumac(msakhan dajaj)
This is a popular Jordanian dish that includes chicken, lots of onions, sumac and bread. Cooked and layered in a large pan and baked.
Ingredients: * I whole chicken cut *6 large onions. Two diced and 4 sliced thin * 1 cup Sumac *2-3 cups of olive oil 3 bay leaves and 3 cardomom pods *12 loaves of naan bread *salt, black pepper, allspice to taste Roasted almonds or pine nuts and chopped parsley for garnish
Directions: Add olive oil to a large pot and Sautee the two large diced onions ans sprinkle with salt. Add bay leaves and cardomom and stir well with the onions Add the chicken, mix together with the onions. Cover and lower the heat to medium low. Stir regularly and turn the heat off when the chicken is done. In another pot, sautee the sliced onions with olive oil Add the chicken(without the liquid) Mix well and add the sumac, salt, pepper and allspice Put the chicken broth left in the pan in a strainer Remove the chicken from the pot leaving the onions. Add some chicken broth to the sauteed onion to have enough to soak the naan bread. Put a layer of the naan bread in a large round aluminum or stainless steel round pan Add some of the sauteed onion and repeat with another layerof bread. Arrange the chicken on top sprinkle more sumac Bake in a preheated oven at 375 until the chicken is golden brown Garnish with roasted almonds or pine nut and parsley Sahtain w afieh Enjoy!
